It shows that the hardware has massive capaibilties, and it's just a matter of waiting on Apple to come out with applications, release the SDK, or waiting on more elegant hacks. The iPhone is not even close to being as "hackable" as a S60 or Windows Mobile device. By the way, plenty of those come with video conferencing built-in. With second cameras dedicated to the task so you can actually use them without having to invest in a bizarre looking mirror that no one will actually use in the real world.

The HTD Hermes has a version with a crummy camera on the front (in addition to the 2MP one on the back). A friend of mine from Saudi Arabia had it and said it worked for video conferencing in his country.

The system sends JPEGs between the phones, at a pretty low framerate. Anyone imagining it as a 30fps system would be quite disappointed.
