      If you reapply an original skin tone onto the finished "average" version you end up with a fairly average looking face

      I don't think it has anything to do with being average, I think if anything, averaging a lot of faces is going to leave you with a very symmetrical face with nice skin, so it's not surprising at all as those are two qualities in themselves that have fairly universal appeal.

      In Mary Shelley's original novel, Dr. Frankenstein made his creation by piecing together the most attractive body parts he could find, without regard to how they looked as a whole. The result as he discovered wasn't a super attractive being, but a terrifyingly ugly monster.
