- DMCer, on 11/30/2007, -1/+1Actually, it's not a myth. By "not flipping it" continuously, you sear the outside of the steak until it's *ready* to be turned over. The juice doesn't escape though the area that's seared on the pan/grill, so when you flip it for the first time, you trap the juices between the layer you just cooked, and the layer searing now. If you keep flipping the steak like they do on informercials, you'll do nothing but dry up your meat. It's a science, buddy.
