As for signals, lots of stuff has been used: a whistle, a clock, mass text messaging, we used a handshake for our first and we had some girls pop a big yellow balloon for the 2nd. Tons of ideas, just use your imagination. To unfreeze, the people holding balloons who were watching the clock started moving after 5 minutes, and everyone else just realized the frozen people were moving again and also went back to "normal", thus leaving the premises.
