Okay, first of all, Starwars was meant to be a children's movie. Second of all, nobody dodged lasers except for Jedi, and I'm not even sure they ever did either. Perhaps you're thinking of the lightsaber deflection stuff? Slightly more feasible, as lightsabers were supposed to weigh almost nothing.
Second of all, 'south' is simply a point of reference. Didn't you ever read Ender's Game as a kid? There's no reason why you can't establish a standardized north and south in space. I mean, directions are more likely to be in vectors than based off wherever the standard 'north' is, but whatever.
Thirdly, they call it lightspeed, but upon going to lightspeed, ships are supposed to enter 'hyperspace' - which sounds more like a slipspace method of travel than having anything to do with speed, unless it's possible to travel at lightspeed through hyperspace. Besides, according to physics, your mass would have to essentially be zero to make lightspeed, so good luck ever getting past the speed of light, champ.
And finally, they're movies (or TV shows, in your case) - who gives a ***** if one is more realistic than the other? I could argue that Starwars invented the special effects that Star Trek would end up using, or that there are only so many good episodes in the six hundred years the series has been going on. I'm sure if anyone cared enough, they could nitpick tiny details (south of the rishi maze... I mean, really? One line?) throughout the Star Trek history. Honestly, how exciting would a blaster fight in Starwars be if you couldn't see the lasers? And for that matter, what do you think a Phaser is?
