How does one really gauge speed on a guitar, by adding tapping and pull-offs you can perform a similar note speed. It seems to me that it only has to do with how fast you can pick, and if that's the case, he could have just played a single note and probably gotten much faster.

Err...not quite. The timing between your left and right hands has to be right or you won't play clean notes (or any notes at all), so it really is both how fast you can pick and how fast you can fret, and how well you can coordinate the two. And I mean, sure there are other pieces he couldn't possibly play at 320bpm, and sure speed is not really what makes a great musician, but c'mon, that's ***** impressive, and at the very least, it represents a tangible product of the man's enormous dedication.

One of the coolest shows I've ever seen was the Hellborg, Lane, and Sipe trio (Jonas Hellborg - one of the sickest bass players alive, and Jeff Sipe, an amazingly clean and technical drummer, for those who don't know them). Best/worst part about those shows was the fact that they were in small clubs and hardly anyone was there - great for me 'cause I got to stand right in front of the stage with my jaw gaping wide open in awe of these music gods, but it was disappointing that not more people were aware of and/or willing to pay money to see those guys play. I'm just glad I was fortunate enough to witness Shawn's playing at least once before he passed. RIP Shawn!!

Orchestral musicians seldom compose the music they play, but that doesn't stop them giving virtuoso performances. Someone like Jimi Hendrix on the other hand was perhaps not technically the best guitar player (if we're considering the mechanically 'best' guitarists in history), but he still ***** all over these ego-stroking wankmasters that are the guitar equivalent of Michael Bolton or Kenny G.

That's not entirely true. I remember seeing a video a couple years ago about a guy that did a "documentary" on new age pop music. Basically what he was saying is that anyone can become a pop star, so long as they have the right software to fix their voice. There were examples of complete amateurs singing, then they showed how they could digitally alter their voice to make it sound like some kind of pop smash hit. It's driving me nuts that I can't find the video.. but I found something that's somewhat related:

Another example of cheating would be lip syncing. Lip syncing is usually done on studio recordings where they actually sounded good.. which was probably altered with software in the first place.
Not arguing, just throwing that out there. There's definitely cheating in art. If you want one last irrefutable example: plagiarism. Writing is an art. This guys pick and fretting speed is amazing. Granted he's only doing hammer ons and slides, but with finger speed like that, I'm pretty sure his string to string and chord accuracy are amazing as well.
